Marko Prizmić, who many consider the best Adriatic chef, is back after taking a year off, when he passed the running of his cult restaurant Kod Marka in Luka Šipanska to his son Đino. Now he is back and in top form. In his home port, he has opened the Dubrava tavern and cafe, which has proved popular immediately. In contrast to his previous restaurant, which concentrated on seafood, here the menu focuses on meat and is intended for a wider public. There is a new menu every day. When we visited, we ate spaghetti in a meat sauce, beef casserole, risotto and an excellent goulash. There was also spit-roasted tuna wrapped in pancetta, prawns, octopus and squid, each more delicious than the next. Now 70, Marko is still going at full strength and with the enthusiasm that a top chef must possess.
